Hunter's Stew With Sauerkraut

  • Ingredients:

- 3 lbs. Fresh Sauerkraut

- 1 large onion

- 2.5 lbs. Pork Shoulder cubed

- 2 lbs. German Smoked Sausage sliced

- 2 Small Onions

- 1 lb. Slab Bacon (sliced is fine too)

- 2.5 lbs.Beef Stew

- 4 cups of water

- 5 Bay Leaves  

  • Directions:

1.     Drain sauerkraut and rinse. Fry diced bacon and remove to platter. Add onion to fat and saute

Italian Beef

  • Ingredients:     

- Olive Oil

- Italian Spice Blend

- Garlic Cloves Minced

- Dash of Cayenne Pepper

- Fresh Lemon Wedge

- Salt and Pepper to Taste

For this recipe I don't measure, so you'll have to use your own judgement on how much to use compared to size of roast. I use a larger roast because I like leftovers for this one!

Lamb Burger

  • Ingredients:

- 1 lb. of ground lamb 

- Couple dashes of Worcestershire sauce

- Salt and Ground Pepper to taste

- Couple pinches of dried Rosemary

- Provolone or Feta Cheese

  • Directions:

1.     Mix well and pat out into 4 patties.

2.     I always do these on the grill to about medium well.

3.     Top with a good Provolone or Feta cheese. Serve on a bun.

 Lamb Chop Rub

  • Ingredients:

- 2 tbsp. Dill

- 1 tbsp. Rosemary 

- 1/2 tbsp. Garlic Powder

- Dash of Cayenne Pepper

- Salt and Pepper

  • Directions:

1.     Mix and rub on chops.

2.     Let them sit at room temperature for 20 minutes.

3.     Grill to desired doneness 

 Pizza Burgers

  • Ingredients:

- 2 lbs. lean Ground Beef

- 1 lb. Sweet or Hot Italian Sausage loose

- 1/3 cup Italian seasoned Bread crumbs

- About 1/2 - 3/4 cup of pizza sauce

- Provolone Cheese

- Italian herb spice blend (about 1 tsp. or a little more)

- Pepperoni sliced from the deli 

- Garlic powder, Salt and Pepper to taste

- Basil, couple good shakes
